Dining With Duncan


Has it ever occurred to you that the Collins Dining Hall would be the perfect place to recreate the festive occasion of a garden tea party? Or at least an IU dining hall version thereof? The makings of such an occasion (and remember, Thursday's lunch, although "only a meal," can still be an occasion) should include a brisk cup of tea and the following sandwich, influenced by the sublime finger sandwiches served at British hotel teas. Try this recipe for a truly sophisticated lunch.


Cucumber Cream Cheese Sandwich

2 slices of bread or a bagel (I suggest the bagel), cream cheese (enough to suit your taste), cucumber slices

Spread the cream cheese on both halves of the bagel. Place the cucumber slices on the bagel halves and assemble as a sandwich. If using bread, cut into fingers. Enjoy this delicate delight. Try adding bean sprouts for a variation.

Unfortunately, it is difficult, if not impossible, for me to remember all of them.
